If you’re like me, you need to eat something sweet after dinner. If you’re trying to stick to eating Paleo, it can be hard to find something to satisfy your cravings that doesn’t involve lots of added sugar, cream, butter, etc. My mom (the Christmas cookie queen) made a batch of macaroons this year, and as luck would have it, these suckers can easily be made Paleo friendly AND are incredibly easy to make.
- 4 egg whites
- 4½ cups unsweetened shredded coconut
- ⅓ cup maple syrup
- ½ tsp vanilla
- pinch of salt
- Line a baking sheet with parchment paper, or use your trusty Silpat.
- In a large bowl, whisk together egg whites, maple syrup, vanilla, and salt until frothy. Fold in the coconut.
- Drop by packed tablespoons onto the baking sheet. Bake about 20 minutes, until lightly golden.
