There are so many days lately where I find myself running out of the house, only having enough time to feed myself breakfast, and NOT enough time to pack myself a lavish snack to have later in the day (isn’t this a daily priority for everyone?). Anyone who knows me well knows that I get quite cranky if I am a) tired or b) hungry. If the period of time between breakfast and my next food intake is more than 4 hours….watch out.
The solution? Balls! Always balls.
More specifically, little raw energy balls that taste like carrot cake, which you can easily pack and take with you on the go. These little guys are perfect for satiating hunger, since they are SO full of healthy fats and lots of fiber. And your mouth will be super confused as to why you are eating carrot cake at 11 a.m. Psych! It’s not. They’re just that good.
Added bonus: if you like Lara bars, and do not like spending $2 (are they $2?) for a little tiny lump of one at the grocery store, then you’re in luck, buddy boy. These prove that they can be made MUCH cheaper and taste JUST as good.
They are made with FIVE (5!) ingredients only: dates, walnuts, cashews, carrot, coconut (and cinnamon, but does that count as an ingredient?). Told you they were healthy. You can roll them in coconut, or leave them naked:
As I’m writing this at 6am, I’m so delirious I can’t remember if I have pants on, and I’m too tired to look down. I could probably use a carrot cake ball right about now.
- 1 cup pitted dates
- ½ cup raw cashews
- ½ cup walnuts
- 1 large carrot, peeled and grated
- 2 teaspoons cinnamon
- ½ cup unsweetened shredded coconut, plus more for coating
- Add dates to a food processor, fitted with blade attachment. Pulse until a paste forms. Add nuts, pulse again until combined. Add remaining ingredients and pulse until combined, but so that you can still see chunks of carrot and coconut.
- Using your hands, form 1" balls. Roll in remaining shredded coconut, or leave naked if you prefer!
