With everything that’s been happening in the world this past week (and past months and past years…) it seems a little silly, almost trivial, almost self-involved, to be spending my time writing a food blog. Shouldn’t I be trying to make a difference, watching the news more, studying social justice issues, writing an opinionated post on Facebook? The truth is, I feel incredibly and completely helpless. And hopeless. And I think a lot of other people feel the same way. And while I don’t necessarily condone complacency in this case, I do think that there are other things we can do to maintain our own kind of peace and happiness in the world. And it starts in our home. With our own families, with our friends. So that’s why I’m going to keep doing this. Because this blog is a peaceful place and with it I am sending love and happiness out into the interwebs. I’m going to keep sharing tuna burgers and banana pancakes and picadillo because this is my way of sharing some joy and emitting some positivity into the world.

This mango avocado salsa is deeeeelish with some plantain chips, which I guarantee will make you the most popular kid in school at your next summer barbeque. * A note on the avocado: try to use an avocado that is barely (barely!) ripe. Trying to dice and mix a super ripe avocado will result in mango guacamole, which – actually….doesn’t sound too bad either…
- 1 mango, diced
- ½ large avocado (or 1 medium), diced
- ⅛ cup red onion, finely diced
- Juice of 1 lime
- Salt and pepper
- Combine all ingredients in a bowl and stir to combine. *Note: Don't over-mix or else the avocado will get mushy!
